TODAY'S RECIPE: PASTA WITH CHICKEN BOLOGNAISE

 Ingredients
  • 1 large onion, chopped
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, chopped
  • 500g pasta
  • 1 handful chopped parsley
  • 30 ml of olive oil
  • 500g of chicken finely shredded
  • salt and pepper to taste
  • dried chilli flakes
  • 6 large tomatoes, chopped
  • 1 tsp complete mixed seasoning
  • Parmesan cheese, finely grated
 
 NOTE: All the ingredients can be gotten at any shoprite outlet.

Method:

Fry the onion, celery and garlic in the olive oil over medium heat for 5 minutes or until glossy. Add the chicken mince and fry until the meat is cooked through and lightly browned. Stir constantly to break up the meat. Season with salt and pepper and with chilli flakes, if desired.

Stir in the chopped tomatoes and simmer for 10 – 15 minutes to allow the flavours to develop.

Boil the pasta according to the instructions on the packet until just cooked. Drain and stir into the tomato sauce and allow to cook for 2 minutes. Sprinkle the parsley and Parmesan cheese on top and serve with your choice of salad or alone.
